Say Yes to Chicken Parm!

I was sitting in my office today and someone had brought in leftovers. The food smelled so good, when they walked past me they had Chicken Parm! My mouth began to water instantly. So then I thought to myself, why can't I have that too? Well there is NO good reason NOT to have it.


Ingredients

1 package of rice-spaghetti
(My favorite brand is Tinkyada, it doesn’t get all mushy)
Gluten Free Bell & Evans Chicken Fingers
Parmesan Cheese
5 Vine Ripe Tomatoes
Handful of Fresh Basil Leaves
3 tbsp Olive oil
5 garlic cloves
Sea Salt to flavor


Preparation of Pasta

  • Prepare pasta as indicated on the instructions on package


Preparation of Chicken

  • Prepare chicken as indicated on the instructions on package

Preparation of Tomato Sauce

  • Puree tomato, basil, garlic, olive oil, and salt. There is no need to heat this sauce up, believe me it tastes much better raw!

The Final Product!


  • Place the pasta on a pretty plate, top with one chicken finger, and drizzle sauce over the top and add a pinch of parm over the top and you have chicken parm the whole family can enjoy.

On The Grill--Fruit Kabobs

Nothing says summer like a good ole BBQ in the backyard. The hamburgers, hot dogs, brats, steaks, chicken, corn, potato's, fish, asparagus, etc... Just about anything can be cooked over the open flame and desserts are no different. No, I'm not talking about chocolate cake, though that does sound yummy doesn't it? I'm talking about fruit kabobs. To say the least I did not have high hopes when I first heard about this. I tried it, of course putting my own flare to it. I did omit the watermelon as some things do not belong grilled! What I got was a pleasant surprise that left my taste buds screaming for more!


Ingredients

Pineapple
Peach
Honey
Cinnamon




Preparation

  • Soak bamboo skewer in water

  • Alternate pineapple and peach on the skewer

  • Place on grill

  • Gently brush honey over the fruit

  • Flip

  • Gently brush honey over the fruit

  • Take off grill and plate--sprinkle cinnamon over kabobs

  • Enjoy!


To add a little extra zing to this dessert and give it a little extra eye candy when serving to guests. Drizzle raspberry over the top and place a mint leaf on the plate! Oh la la your guests will think you spent forever creating this wonderful desert!

To prepare the raspberry drizzle:

  • Mush up fresh raspberries

  • Place in an aluminum foil bowel on the grill

  • Once warmed, drizzle over kabobs

  • Enjoy!

Strawberry Salad Dressing

The other day I was making myself a salad and I was going to have a strawberry slushie to wash it down with. But things got ugly when I realized I had no ice cubes to put into the blender. So there I was standing in the kitchen with my strawberries already puree'd. Then it hit me. Put it on my salad! It was soooo delicious. Give it a try, you won't be disapointed! I can't wait to try it with peaches!!!

  • Puree Strawberries
  • Pour over salad

The Time Is Now: Make A Healthy & Balanced Kids Menu

Jillian Michaels posed a very good question!

"WHY are all kids menus mac n cheese, chicken fingers, pbj on white bread, spaghetti, burger & Fries..."

We need to start teaching our kids how to eat right young and we aren't going to do this with the standard kids menu! There needs to be some REAL changes in the restaurant business.

Veggie Soup!

Don't you just love soup? Here is an experiment gone right! I took an old classic and gave it my own little twist :) Enjoy!

Ingredients

Chicken Broth
Corn
Peas
Fresh Green Beans
1/2 Onion
1 Sweet Potato
Bunch of Celery
Celtic Sea Salt
Cracked Black Pepper
Basil
Parsley
Rosemary
Marjoram
Italian Seasoning (Herbs of Italy)
Pinch of Poultry Seasoning (Whole Foods has Gluten Free poultry seasoning!)

Preparation

  • Cut all the veggies thick and place in the crock pot.
  • Add the prepared chicken broth
  • Add spices
  • Cook on high for 6 hours
How to make homemade chicken broth:

  • Fill a large pot with water; bring to a boil
  • Once water is boiling put in 1 teaspoon of Celtic Sea Salt
  • After removing the cooked meat off the rotisserie chicken, place the bones still in tact in the boiling water
  • Place the lid on the pot and let it simmer for 6 hours on low
  • Remove any solids that may be in the broth

Meg's Super Easy Guacamole

I like my guacamole to be very simple. This is my favorite way of making it! Although I have been known to add purple onions and tomato's which is incredibly delicious!

Ingredients

1 Avocado
1 Lime

Preparation

  • Slice Avocado in half and remove pit
  • Remove the tasty part with a spoon and place in a small cup
  • Add the juice of 1 Lime
  • Smash Together until nice and chunky with a subtle smoothness
  • Serve and Enjoy!

Turkey Wrap

This is one of my favorite things to make. Not only is it quick and easy but it tastes like it's from a gourmet sub shop!

Ingredients

1 Gluten Free Brown Rice Tortilla (My favorite brand is Food For Life)
Turkey
Pepper Jack Cheese (Cabot)
Tomato
Cucumber
Alfalfa or Broccoli Sprouts
1 Avocado (For Guacamole)
1 Lime (For Guacamole)



Preparation
  • Place the Brown Rice Tortilla on a plate
  • Smear Guacamole all around the Brown Rice Tortilla
  • Slice your Pepper Jack cheese thinly and place over the Guacamole
  • Layer the turkey over the cheese
  • Add diced Cucumber and Tomato
  • Place Sprouts over the top
  • Wrap it up the best you can!
  • Serve and Enjoy!

Smokey Chicken Alfredo

I just love fettuccine Alfredo! Of course it didn’t love me back. Now I have a wonderfully quick and tasty recipe that is sure to please!

Ingredients

1 package of spaghetti
(My favorite brand is Tinkyada, it doesn’t get all mushy)
Parmesan Cheese
Whipping Cream
(I love StoneVille Creamery, which is now available at Whole Foods in Annapolis)
Butter
Garlic Powder
Mushrooms
Smoked Rotisserie Chicken

Preparation of Pasta


  • Prepare pasta as indicated on the instructions on package

Preparation of Alfredo Sauce

  • In a small pot combine 1 cup whipping cream, about ¼ cup of parmesan cheese (you can add more if needed later), ½ cup of butter, garlic powder, and black pepper to taste
  • Cook on low heat, stirring with a whisk
  • When thick and creamy taste to determine if you prefer more parmesan cheese

Preparation of Mushrooms

  • In a small frying pan sauté freshly sliced mushrooms in a little butter, cook until browned and tender

The Final Product!

  • Once the pasta is drained put back in pot then add the smoked chicken, mushrooms, and sauce.
  • Mix well
  • Serve and Enjoy!

Oh Yes! It's PIZZA!!!!!!!!!!!

There is one food that I simply cannot resist:PIZZA. When I found out that gluten is what was causing all sorts of issues I thought pizza was gone forever! But it's not!!! Here is a super yummy pizza recipe :)

Ingredients

1 Gluten Free Brown Rice Tortilla (My favorite brand is Food For Life)
Mozzarella Cheese
Mushrooms
Tomato Basil Sauce (My favorite brand is 365)
Herbs of Italy (seasoning)

Preparation

  1. Pre-heat the oven to 350 degrees
  2. Place the Brown Rice Tortilla on a pizza pan and bake for 3 mins
  3. Flip the Brown Rice Tortilla and bake for another 3 mins
  4. Remove the Brown Rice Tortilla from the oven and smear on the Tomato Basil Sauce followed by a handful of Mushrooms and Mozzarella Cheese, then sprinkle Herbs of Italy over the top.
  5. Bake for 15 mins
  6. Serve and Enjoy!
