Say Yes to Chicken Parm!

I was sitting in my office today and someone had brought in leftovers. The food smelled so good, when they walked past me they had Chicken Parm! My mouth began to water instantly. So then I thought to myself, why can't I have that too? Well there is NO good reason NOT to have it.


Ingredients

1 package of rice-spaghetti
(My favorite brand is Tinkyada, it doesn’t get all mushy)
Gluten Free Bell & Evans Chicken Fingers
Parmesan Cheese
5 Vine Ripe Tomatoes
Handful of Fresh Basil Leaves
3 tbsp Olive oil
5 garlic cloves
Sea Salt to flavor


Preparation of Pasta

  • Prepare pasta as indicated on the instructions on package


Preparation of Chicken

  • Prepare chicken as indicated on the instructions on package

Preparation of Tomato Sauce

  • Puree tomato, basil, garlic, olive oil, and salt. There is no need to heat this sauce up, believe me it tastes much better raw!

The Final Product!


  • Place the pasta on a pretty plate, top with one chicken finger, and drizzle sauce over the top and add a pinch of parm over the top and you have chicken parm the whole family can enjoy.

On The Grill--Fruit Kabobs

Nothing says summer like a good ole BBQ in the backyard. The hamburgers, hot dogs, brats, steaks, chicken, corn, potato's, fish, asparagus, etc... Just about anything can be cooked over the open flame and desserts are no different. No, I'm not talking about chocolate cake, though that does sound yummy doesn't it? I'm talking about fruit kabobs. To say the least I did not have high hopes when I first heard about this. I tried it, of course putting my own flare to it. I did omit the watermelon as some things do not belong grilled! What I got was a pleasant surprise that left my taste buds screaming for more!


Ingredients

Pineapple
Peach
Honey
Cinnamon




Preparation

  • Soak bamboo skewer in water

  • Alternate pineapple and peach on the skewer

  • Place on grill

  • Gently brush honey over the fruit

  • Flip

  • Gently brush honey over the fruit

  • Take off grill and plate--sprinkle cinnamon over kabobs

  • Enjoy!


To add a little extra zing to this dessert and give it a little extra eye candy when serving to guests. Drizzle raspberry over the top and place a mint leaf on the plate! Oh la la your guests will think you spent forever creating this wonderful desert!

To prepare the raspberry drizzle:

  • Mush up fresh raspberries

  • Place in an aluminum foil bowel on the grill

  • Once warmed, drizzle over kabobs

  • Enjoy!
